The Kouign Amann (pronounced "Queen") is a traditional flakey pastry from Brittanny, France. In this workshop, you'll learn how to make a sourdough, fresh-milled version of this croissant-like pastry. In addition to exploring mixing and laminating techniques, participants will be educated on various fillings and shapes, along with the baking process.
The day will include:
- Sourdough feeds and dough mixing
- Building butter blocks
- Lamination
- Lunch
- Filling techniques
- Baking
- Kouign Amann tasting
At the end of the workshop, participants will take home a sourdough starter as well as their baked kouign amanns to share with others.
